Cooking the apples on the stovetop first cuts the total time to about 30 minutes. It's a straightforward weeknight dessert that delivers the comfort of a traditional pie without the long bake.

Instructions
Preheat oven to 400°F (205°C). Set an oven rack in the middle position.
In a mixing bowl, toss the sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, and salt until evenly coated. Set aside.
Heat butter in the skillet over medium heat until melted and foamy. Add the apple mixture and sauté for 6–8 minutes, stirring occasionally, until the apples are just tender and juices slightly reduced.
While the apples cook, lightly roll out the puff pastry to just larger than your skillet. Cut a small X in the center for ventilation.
Turn off the heat. Carefully place the puff pastry over the apples in the skillet, tucking edges inside the pan slightly. Brush with beaten egg and sprinkle with turbinado sugar if using.
Transfer skillet to oven and bake for 15–18 minutes, until pastry is puffed and deep golden brown.
Let rest 5 minutes before serving. Slice into wedges straight from skillet or invert onto a plate for rustic presentation.

Substitute puff pastry with chilled pie dough for a more traditional lid.
Add 1 tsp lemon juice for brighter apple flavor.
