Ground turkey replaces the traditional beef in these sloppy joes, keeping the filling leaner while a bold spice blend makes sure the flavor holds up. Everything simmers together in one skillet and piles onto buns in about 20 minutes — a straightforward weeknight dinner with very little cleanup.
Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until it's translucent and fragrant.
Add minced garlic to the skillet and cook for another 1 minute, ensuring it doesn’t burn.
Increase the heat to medium-high and add the ground turkey. Cook until browned and cooked through, stirring frequently to break up the meat, about 6-7 minutes. The turkey should lose any pink color.
Stir in the tomato sauce, Worcestershire sauce, apple cider vinegar, brown sugar, chili powder, and smoked paprika. Season with salt and pepper.
Reduce heat to medium-low and let the mixture simmer for about 10 minutes, allowing the flavors to meld and the sauce to thicken. Stir occasionally.
Lightly toast the hamburger buns in an oven or on a grill for added texture.
Serve the turkey mixture on the toasted buns, garnished with fresh parsley and pickled jalapeños, if desired.
Notes
For a spicier version, add an extra teaspoon of chili powder or a pinch of cayenne pepper. To make this dish gluten-free, use gluten-free hamburger buns available at most grocery stores.
