Steam perogies (4 minutes): Lay 1 lb frozen perogies in a single layer over the onions. Add 1/2 cup broth or water, cover, and cook over medium heat (about 350°F / 175–180°C) until perogies are tender and slightly puffed.
Crisp and glaze (about 4 minutes): Uncover, raise heat to medium-high, and let liquid evaporate (1–2 minutes). Sear perogies 2 minutes per side until golden. Return bacon and toss to glaze in brown butter.
Season and finish (1 minute): Add remaining salt to taste and 1/2 tsp black pepper. Taste for balance; you should get buttery, toasty, and lightly tangy notes.
