Bloom Aromatics (3 minutes): Heat 1 tbsp oil in a 12-inch skillet over medium heat (if using an electric skillet, about 350°F/175°C). Add diced white onion and a pinch of salt; sauté until translucent with light golden edges, 2–3 minutes, then add sliced garlic and 1 tsp cumin for 30–45 seconds until fragrant—avoid browning the garlic.
Blend the Salsa (1–2 minutes): Transfer the onion-garlic mixture to a blender. Add fire-roasted tomatoes, jalapeño, the chipotle plus 1 tsp adobo sauce, broth, 1 tsp kosher salt, and an optional pinch of sugar. Blend on high for 30–45 seconds until smooth and vividly red. If you don’t have a blender, a food processor works; the salsa will be slightly chunkier.
Simmer to Thicken (5–7 minutes): Return the salsa to the same skillet. Bring to a lively simmer over medium heat (surface should gently bubble, roughly 200–212°F / 93–100°C). Cook, stirring occasionally, until slightly thickened—you should be able to drag a spoon through and see a faint trail that slowly closes. Adjust salt to taste.
Cook the Eggs (3–4 minutes): In a separate nonstick skillet, heat 1 tbsp butter or oil over medium heat (about 300–325°F / 150–163°C). Crack in the eggs and cook sunny-side up until whites are set and edges are gently frilled, 2–3 minutes. Season with salt and black pepper. For over-easy, flip and cook 15–30 seconds more.
Sauce the Chips (30–60 seconds): Take the salsa skillet off the heat. Add the sturdy tortilla chips and fold gently with tongs to coat. The cue is balance: some chips softened, some still crisp—aim for a marbled texture rather than fully soggy.
Plate and Finish (2 minutes): Divide chilaquiles among 4 warm plates. Top each with an egg, drizzle with crema, shower with queso fresco, and garnish with sliced red onion, avocado, radishes, and cilantro. Finish with a generous squeeze of lime. The perfect plate shows vibrant reds and greens, creamy whites, and rising chile-tomato aroma.
