Seasoned ground beef is cooked with onion, mixed with a creamy, cheesy sauce, then topped with a single layer of tater tots and baked until crisp. The casserole takes about 30 minutes from start to finish and feeds a family with minimal cleanup. Frozen tater tots go straight from the bag to the top of the dish — no thawing needed.
Heat olive oil in a large skillet over medium heat. Add ground beef, onion, and garlic. Cook, stirring occasionally, until the beef is browned and the onions are translucent, about 5-7 minutes. Drain excess fat if necessary.
Add salt and black pepper to the beef mixture, stirring to combine.
Transfer the beef mixture to a 9x13 baking dish, spreading it evenly. Sprinkle the shredded cheddar cheese over the beef layer.
Arrange the frozen tater tots in a single layer over the cheese.
Bake in the preheated oven for 20-25 minutes, or until the tater tots are golden brown and crispy on top.

Jen’s Tips:
For a spicy twist, add a dash of cayenne pepper to the beef mixture.
Swap cheddar cheese with pepper jack for a bit more kick.
To save time, prepare the beef mixture a day in advance and refrigerate until ready to assemble.
