Ground pork cooks quickly in a wok-style pan before being coated in a tangy sauce built from vinegar, sugar, and soy. Using minced pork instead of whole pieces speeds up the cooking considerably, getting dinner on the table in around 20 minutes. Serve it over steamed rice to catch the sauce.

Instructions
In a large skillet, heat the vegetable oil over medium heat.
Add the minced pork, breaking it up with a spatula, and cook until it turns golden brown. This should take about 5 minutes.
In the same skillet, add chopped onion and bell peppers. Sauté for another 3-4 minutes, or until the vegetables start to soften.
Add the pineapple chunks to the skillet and stir them in with the pork and vegetables.
In a mixing bowl, combine the brown sugar, rice vinegar, ketchup, soy sauce, and the cornstarch mixture (cornstarch and water). Whisk until smooth.
Pour the sauce over the pork mixture in the skillet, stirring continuously until the sauce thickens and coats the pork and vegetables. This will take about 3-5 minutes.
Season with salt and black pepper to taste. Sprinkle with sliced green onions before serving.

If you're tight on time, using pre-chopped vegetables can be a lifesaver.
For a spicy kick, add a teaspoon of chili flakes to the sauce.
This dish is adaptable; ground chicken or turkey are excellent pork substitutes.
