Instructions
Preheat your oven to 200°C (392°F). Roll out the puff pastry and gently press it into a 10-inch tart pan. Trim any excess pastry and prick the base with a fork to prevent puffing up during baking.
In a frying pan over medium heat, add the olive oil and sauté the onions with a pinch of salt until they are soft and golden, approximately 5 minutes. Add the garlic and cook for another minute.
Increase the heat to medium-high and add the ground lamb. Cook until the lamb is browned and cooked through, about 8 minutes, stirring to break up the meat. Add cumin, coriander, paprika, and a little more salt and pepper to taste. Stir in the spinach until wilted, and remove from heat.
In a mixing bowl, whisk together the eggs and cream. Stir in the feta cheese.
Spread the lamb mixture evenly over the pastry base. Pour the egg and cream mixture over the top.
Bake in the preheated oven for about 25 minutes, or until the quiche is set and the top is a beautiful golden brown.
