Instructions
Preheat your oven to 200°C (392°F). Prepare a baking dish by greasing it lightly with olive oil.
Cut the tops off the bell peppers and remove the seeds. Arrange them hollow-side up in the baking dish.
In a large skillet over medium heat, add a drizzle of olive oil. Sauté the chopped onion and garlic until they are fragrant and the onion is translucent, about 3 minutes.
Add the ground turkey to the skillet, breaking it up with a wooden spoon. Cook until the turkey is browned, about 5 minutes.
Stir in the cooked rice, tomato sauce, oregano, basil, salt, and pepper. Cook for another 2 minutes, allowing the flavors to meld.
Evenly divide the turkey mixture among the prepared bell peppers. Top each pepper with shredded cheese.
Bake in the preheated oven for 15-20 minutes, until the cheese is melted and bubbly, and the peppers are tender yet maintain their shape.
Notes
For added depth of flavor, try roasting the bell peppers for a few minutes before stuffing.
If you prefer extra tenderness, cover the baking dish with foil for the first half of baking.
