Chili-spiced ground beef and beans are layered with tortillas, smoky tomato sauce, and melted cheese in this straightforward enchilada bake. Everything goes into one dish, making cleanup easy on busy nights. It's ready in about 35 minutes and serves well straight from the baking dish.
Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté for 2–3 minutes until translucent.
Add the garlic and cook for another 30 seconds until fragrant.
Stir in the ground beef, breaking it up with a wooden spoon, and cook until browned—about 5–6 minutes.
Season with cumin, chili powder, smoked paprika, salt, and pepper. Stir until the spices coat the meat evenly.
Add black beans, half the enchilada sauce (1/2 cup), and the diced tomatoes. Simmer for 2–3 minutes to meld the flavors. Remove from heat.
Grease a baking dish lightly. Spoon some of the beef mixture onto each flour tortilla, roll them up, and place them seam-side down in the dish.
Pour the remaining 1/2 cup enchilada sauce over the rolled tortillas. Sprinkle the shredded cheese evenly on top.
Cover loosely with foil and bake for 15 minutes. Remove the foil and bake uncovered for an additional 5 minutes until the cheese is bubbly and slightly golden.
Garnish with chopped cilantro before serving.
Notes
You can substitute ground turkey or plant-based mince for a lighter or vegetarian version.
For added kick, stir in a chopped jalapeño with the onions.
To Make Ahead: prepare the filling and assemble the tortillas earlier in the day; add sauce and cheese just before baking.
Use smoked chipotle paste for a deeper, smoky flavor if available.
