Spiced lamb mince cooks quickly in a skillet with warm Middle Eastern seasonings, then gets served alongside flatbread topped with za'atar — the dried herb blend that adds an earthy, tangy finish. The whole meal is on the table in about 30 minutes, with minimal prep and one main pan to clean.
Preparation of the Lamb Mince: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
Add the ground lamb to the skillet, breaking apart with a spoon. Cook for 5-7 minutes, stirring occasionally, until the lamb is browned.
Stir in ground cumin, ground coriander, and chili flakes. Continue to cook for another 3 minutes, allowing the spices to infuse the lamb. Season with salt to taste.
Preparation of the Za’atar Flatbread: In a mixing bowl, combine flour, warm water, yeast, and salt. Mix until a soft dough forms. Knead for 2-3 minutes until smooth.
Divide the dough into four equal parts. Roll each part into a flat round using a rolling pin to about 1/4-inch thick.
Heat a frying pan over medium-high heat. Cook each flatbread for about 2 minutes on each side until puffed and golden.
Brush the cooked flatbreads with olive oil and sprinkle generously with za'atar spice mix before serving.
Serving: Plate a generous scoop of spiced lamb mince on top of each za'atar flatbread. Optionally garnish with fresh parsley or mint leaves for added freshness.
Notes
For added flavor, serve with a side of tzatziki or a simple cucumber salad. You can use store-bought flatbreads if time-constrained.
