Smoky Lemon-Herb White Bean Skillet with Garlic & Greens

Cannellini beans, smoky paprika, rosemary, and lemon come together in a single skillet in about 30 minutes for a filling, pantry-friendly main. Cherry tomatoes break down into a quick pan sauce, and baby greens wilt in at the end to add color and freshness. Serve it with crusty bread to catch the broth.

Instructions
Mise En Place (3–4 minutes): Zest the lemon (about 1 tsp) and set aside, then juice it (about 2 tbsp). Drain and rinse the beans in a colander. Slice the shallot and garlic, halve the cherry tomatoes, and chop the rosemary. If serving with bread, preheat the oven to 425°F (220°C) and line a baking sheet.
Heat the Skillet (1–2 minutes): Set a 12-inch skillet over medium heat and add 2 tbsp olive oil. When the oil shimmers and a slice of shallot sizzles on contact, you’re ready to cook.
Sweat the Shallot (2–3 minutes): Add sliced shallot with a pinch of salt. Stir occasionally until translucent with lightly golden edges—this builds sweetness without burning.
Bloom Aromatics (30–60 seconds): Add garlic, rosemary, red pepper flakes, and smoked paprika. Stir constantly until fragrant; blooming spices in fat intensifies flavor. Avoid browning the garlic.
Deglaze and Brighten (1 minute): Pour in 1/2 cup vegetable broth and 2 tbsp lemon juice. Scrape up any browned bits with a wooden spoon—those are pure flavor.
Simmer the Beans (5 minutes): Add the rinsed cannellini beans and 3/4 tsp kosher salt. Simmer gently. After 2 minutes, lightly mash a few beans against the pan with the spoon to thicken the sauce; keep most beans whole for texture contrast.
Soften the Tomatoes (3 minutes): Stir in halved cherry tomatoes and cook until they slump and glaze the beans. The sauce should look glossy and slightly thick.
Wilt the Greens (1–2 minutes): Fold in baby kale or spinach. Cook just until leaves turn vivid green and tender. The skillet should smell citrusy and savory.
Finish and Season (1 minute off heat): Turn off the heat. Drizzle with 1 tbsp olive oil, sprinkle in lemon zest and black pepper, and adjust salt. Stir in Parmesan if using for extra savoriness.
Optional Side, in Parallel: While the beans simmer (Steps 6–8), toast sliced crusty bread on a baking sheet at 425°F (220°C) for 6–8 minutes until crisp at the edges. For extra color, broil 1 minute at 500°F (260°C), watching closely.

Lisa’s Tips:
Texture Control: Mash more beans for a creamier, stew-like consistency; leave them mostly whole for a lighter skillet.
Boost Umami: Add 1–2 tsp white miso or a dash of soy sauce with the broth for depth (keep it subtle to maintain Mediterranean character).
Herb Swaps: Rosemary can be swapped for thyme; finish with parsley for freshness. A few torn basil leaves are lovely in summer.
Heat Management: If garlic threatens to brown, splash in broth early to cool the pan.
Dairy-free: Omit Parmesan or use a vegan alternative; add 1 tsp nutritional yeast for a cheesy echo.
