Add Heat and Tomatoes: Sprinkle in red pepper flakes; add halved cherry tomatoes. Cook until tomatoes slump and release juices, 3–4 minutes, stirring occasionally. Look for glossy skins and a jammy aroma.
Deglaze (optional but recommended): Pour in 1/4 cup dry white wine. It should sizzle. Scrape up any browned bits with a wooden spoon and let the alcohol cook off, 60–90 seconds, until the pan smells fruity instead of boozy.
Build the Sauce: Add vegetable broth, smoked paprika, and thyme. Simmer gently over medium heat, 2–3 minutes, to mingle flavors. The liquid should look slightly thickened and brick-red from the paprika.
Add Butter Beans: Stir in the drained butter beans. Simmer 5–6 minutes, stirring occasionally, until the beans are hot, tender, and lightly creamy at the edges. If the pan gets dry, splash in another 2–3 tablespoons broth or water.
Greens and Finish: Fold in spinach and cook just until wilted, about 1 minute. Remove from heat. Stir in lemon zest, lemon juice, and unsalted butter until the sauce turns glossy and emulsified, 30–60 seconds. Stir in parsley. Season with 1 teaspoon kosher salt and 1/2 teaspoon black pepper, adjusting to taste.
