Smoked pork breakfast hash is a one-pan dish of diced potatoes, bell peppers, and smoked pork cooked together until the potatoes are tender and the edges begin to crisp. The smokiness of the pork seasons the entire pan as everything cooks, so no additional fuss is needed. It goes from skillet to table in about 30 minutes.

Instructions
Heat a large skillet over medium heat and add the olive oil. Once the oil shimmers and releases a gentle aroma, add the diced potatoes. Sauté them until they turn golden brown and begin softening, about 8 minutes.
Stir in the onions and garlic, continuing to cook until the onions become translucent and slightly caramelized, approximately 5 minutes.
Add the smoked pork, bell peppers, smoked paprika, salt, and black pepper. Toss the mix and cook for another 10 minutes until the pork is heated through and the flavors meld beautifully.
Give the mixture one final stir, ensuring everything is evenly distributed and coated with the spices. Serve hot.

Jen’s Tips:
For a twist, try adding a dash of chili flakes for spiciness or grated parmesan for extra flavor.
To make this dish vegetarian, swap the smoked pork for marinated tofu or smoked tempeh.
Short On Time? Use pre-cooked frozen diced potatoes to cut cooking time.
