Marinated pork cooks quickly over high heat and is served over fluffy quinoa with vegetables and a savory sauce. Quinoa adds protein and a slightly nutty flavor that pairs well with the seasoned meat. The bowl is ready in 30 minutes and works equally well for lunch or dinner.

Instructions
Rinse the quinoa under cold water. In a medium saucepan, combine quinoa and water. Bring to a boil over medium-high heat. Reduce heat to low, cover, and simmer for 15 minutes until the quinoa is fluffy and water is absorbed.
In a mixing bowl, whisk together soy sauce, honey, sesame oil, minced garlic, and grated ginger to create a marinade. Add the sliced pork, ensuring all pieces are well coated. Allow it to marinate while the quinoa cooks, about 10 minutes.
Heat a large skillet over medium-high heat. Add pork slices in a single layer, cooking until browned on both sides and cooked through, approximately 4-5 minutes per side.
Once the pork is cooked, remove it from the skillet and set aside. In the same skillet, quickly wilt the spinach and red bell pepper, about 2-3 minutes, enhancing their natural color and flavor.
To assemble the bowl, spoon a base of fluffy quinoa into each serving bowl. Top with slices of seared pork, sautéed spinach, and bell pepper. Garnish with green onions and sesame seeds.
Notes
Consider replacing pork with chicken breast for a lighter version or tofu for a vegetarian option. For a touch of spice, drizzle with a bit of sriracha or a sprinkle of chili flakes before serving.
