Instructions
Preheat a grill pan or large skillet over medium-high heat.
Add 1 tablespoon of olive oil to the pan. When the oil is shimmering, add the sausage links. Cook for about 10-12 minutes, turning occasionally, until browned and cooked through. (For patties, aim for the same browning and ensure an internal temperature of 74°C/165°F.)
While the sausages cook, heat the remaining tablespoon of olive oil in a separate pan. Add the sliced red bell pepper and onion. Sauté until the onions are translucent and the peppers are slightly charred, about 8-10 minutes. Season with salt and pepper.
Once the sausages are cooked, place a slice of provolone on each and allow it to melt, about 1 minute more.
Assemble the burgers by placing sausages on the bottom buns, topping them with the sautéed peppers and onions, and adding marinara sauce if desired. Close with the top buns.
Notes
