Instructions
Preheat your oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan and line with parchment paper for easy removal.
In a large mixing bowl, whisk together the sugar, oil, eggs, and vanilla extract until the mixture becomes pale and slightly thickened—about 1 minute of vigorous whisking.
Fold in the grated zucchini using a spatula. Do not squeeze out the moisture; it keeps the bread tender and moist.
In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
Gradually add the dry ingredients to the wet mixture in three parts, stirring gently with a spatula until just combined. Do not overmix—stop as soon as no streaks of flour remain.
Gently fold in the chopped nuts if using.
Pour the batter into the prepared loaf pan, smoothing the top with the back of a spoon or spatula. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean and the top is golden and slightly springy to the touch.
Cool in the pan for 5–10 minutes, then transfer to a wire rack to cool for at least 15 minutes before slicing.
