Preheat and Sear the Chicken (4 minutes): Heat 1 tbsp oil in a large skillet over medium-high heat (surface about 400°F / 205°C). Season sliced chicken with 1/2 tsp kosher salt and 1/4 tsp black pepper. Sear in a single layer, 2 minutes per side, until lightly browned and mostly opaque—no need to fully cook. Transfer to a plate; keep the skillet on the heat.
Build the Tinga Base (5 minutes): Add sliced onion to the same skillet and sauté 2 minutes until translucent with golden edges. Stir in minced garlic and cook 30 seconds until fragrant. Add tomato paste, cumin, and oregano; cook 1 minute, stirring, to toast the spices. Stir in minced chipotle and adobo sauce, then pour in chicken broth and crushed tomatoes, scraping up browned bits (fond). Simmer 1–2 minutes until slightly thickened.
Transfer to Slow Cooker (1 minute): Pour the hot sauce into a 4–6 quart slow cooker and set to HIGH (about 200–212°F / 93–100°C). Add the seared chicken and any juices; stir to coat evenly.
Quick-Meld Cook (15 minutes): Cover and cook on HIGH for 15 minutes. The chicken should reach 165°F / 74°C and feel tender; the sauce will smell smoky-sweet with gentle heat. Stir in 1 tsp apple cider vinegar and 1 tbsp lime juice. Taste and season with a pinch more salt or a pinch of sugar if the sauce tastes overly sharp.
Warm the Tortillas (2 minutes): While the tinga finishes, warm tortillas in a dry skillet over medium heat (about 350°F / 175°C) 30–45 seconds per side until pliable with light brown spots. Alternatively, wrap in a damp paper towel and microwave 30–45 seconds.
Finish and Serve (0–1 minute): If desired, briefly chop or shred the chicken in the slow cooker using tongs for bite-sized pieces. Serve immediately.

Heat Control:Prefer milder heat? Use 1 chipotle and skip the extra adobo sauce. Want more kick? Add a second pepper or a dash of chipotle powder.
Substitutions: Use boneless, skinless chicken breasts (sliced 1/2-inch) or turkey cutlets; reduce slow-cooker time by 2 minutes. For vegetarian tinga, swap chicken for 2 cups canned jackfruit (drained) or thick-cut mushrooms; skip the sear and cook 10 minutes on HIGH.
