Quick Sicilian Cannoli with Orange, Pistachio, and Dark Chocolate

Classic Sicilian cannoli gets a fast weeknight treatment using store-bought shells, a ricotta filling brightened with orange zest and vanilla, and a quick dip in dark chocolate. Toasted pistachios add crunch and nuttiness throughout. The whole dessert comes together in about 30 minutes with no frying required.

Instructions
Prep the Ricotta (5 minutes): Line a fine-mesh strainer with cheesecloth or paper towels and set it over a bowl. Add the ricotta and gently press with a spatula to remove excess moisture. Tip: If very wet, blot the top with additional paper towels—drier ricotta means a fluffier, stable filling.
Toast the Pistachios (7–9 minutes): Preheat the oven to 325°F/163°C. Spread chopped pistachios on a parchment-lined baking sheet and toast until fragrant and just golden at the edges, 7–9 minutes. Cool completely. (Stovetop alternative: medium heat in a dry skillet, stirring, 3–5 minutes until fragrant.)
Melt the Chocolate (3–4 minutes): Place the chopped dark chocolate in a microwave-safe bowl. Microwave at 50% power in 30-second bursts, stirring between each, until smooth and fluid, about 90–95°F/32–35°C. (Double boiler: set a bowl over barely simmering water; stir until just melted.) Reserve 2 tablespoons for drizzling.
Dip the Shells (5 minutes active): Dip one or both ends of each cannoli shell into the melted chocolate, allowing excess to drip. Set on parchment to firm up (speed set by refrigerating for 5 minutes). For extra crunch, sprinkle a few toasted pistachios on the wet chocolate.
Make the Filling (5–6 minutes): In a medium bowl, whisk the drained ricotta and mascarpone until smooth and fluffy, 30–60 seconds. Whisk in confectioners' sugar, vanilla, orange zest, cinnamon, and salt until velvety. Fold in mini chocolate chips and half of the cooled pistachios; reserve the rest for finishing. The mixture should be thick, glossy, and hold soft peaks.
Bag it: Transfer the filling to a piping bag fitted with a 1/2-inch star or round tip. No piping bag? Fill a zip-top bag, press the filling into one corner, and snip a 1/2-inch opening.
Fill the Shells: Pipe from one end to the center, then flip and pipe from the other side to meet in the middle. You should feel gentle resistance—overfilling can crack shells.
Finish and Garnish: Press the ends into the remaining pistachios. Drizzle with reserved melted chocolate. Add a strip of candied orange peel if using, and dust lightly with confectioners' sugar. Serve immediately for maximum crunch.
Make-Ahead Note: Fill up to 1 hour before serving for good texture; for ultimate crispness, fill just before serving. Keep shells and filling separate if holding longer.

Jen’s Tips:
Ricotta Matters: Whole-milk ricotta with lower moisture (Calabro/BelGioioso) yields the creamiest filling. If using very fresh ricotta, extend draining to 10–15 minutes.
Flavor Upgrades: Stir in 1–2 teaspoons of Marsala or orange liqueur for a classic bakery nuance. Add a pinch of espresso powder to deepen the chocolate notes.
Texture Tweaks: For an ultra-smooth filling, blitz the ricotta in a food processor for 15–20 seconds before mixing. Don’t over-process or it can loosen.
No Shells? Use crisp sugar cones as a playful substitute, or serve the filling as a deconstructed parfait layered with crushed cookies.
Dairy Alternatives: Lactose-free ricotta works well; skip mascarpone or sub 2 tablespoons cold heavy cream whisked in to lighten the texture.
Keep it Crisp: Avoid adding fresh fruit inside the shell; moisture softens the pastry quickly. Finish with dry garnishes at the ends.
