Instructions

Microwave at 50% power for 60 seconds, stir, then continue in 20–30 second bursts until smooth and glossy, about 120–130°F (49–54°C). Do not exceed 130°F (54°C) to keep the chocolate silky. Stovetop option: melt gently over a double boiler with barely simmering water (~185°F / 85°C) beneath; keep the bowl bottom off the water and the chocolate below 130°F (54°C).
Flavor the base (30 seconds): Stir in vanilla and kosher salt until fully incorporated. The mixture should smell nutty and aromatic with a light fudge-like sheen.
Coat the cereal (1–2 minutes): Pour the warm chocolate mixture over the cereal. Using a rubber spatula, fold gently from the bottom up to avoid crushing. Continue until every piece looks evenly glossy with no dry pockets.
Sugar toss (2–3 minutes): Transfer coated cereal to a 2-gallon zip-top bag. Add 1 1/2 cups powdered sugar, seal with most air pressed out, and shake vigorously until every piece is matte and evenly dusted. If areas still look shiny, add up to 1/2 cup more powdered sugar and shake again.
