Borek is a savory pastry common across the Eastern Mediterranean, made by layering or rolling phyllo dough around a seasoned filling. Here, ground pork is mixed with fresh herbs and wrapped in thin phyllo sheets, then baked until crisp and golden. The whole recipe is ready in about 30 minutes and works as a starter or a light meal.
Preheat the oven to 375°F (190°C). In a skillet, heat the olive oil over medium heat, add the finely chopped onion, and sauté until translucent, about 3-4 minutes.
Add the minced garlic and ground cumin, stirring until fragrant, about 1 minute.
Add the pork mince, seasoning with salt and pepper. Cook until browned, breaking up any lumps with a spatula, for about 5-7 minutes.
Stir in the chopped herbs and remove from heat. Set aside to cool slightly.
Spread a sheet of phyllo pastry on a clean surface and brush with melted butter. Place another sheet on top and repeat the process.
Cut the phyllo into strips. Place a tablespoon of pork mixture at one end and roll, tucking in the sides to form a triangular shape.
Place the boreks on a baking sheet, brush with more butter, and bake for 10-15 minutes until golden brown.
Notes
For a crispy finish, brush the boreks with milk instead of butter before baking.
Substitute pork with chicken or turkey mince for a lighter option.
Adding a pinch of sumac can bring a tangy depth of flavor.
