Instructions
In a blender, combine the aji amarillo paste and mayonnaise. Blend until smooth to create a rich sauce.
In a mixing bowl, combine ground chicken, breadcrumbs, chopped onion, minced garlic, salt, and black pepper. Mix until incorporated, then shape into 4 patties.
Heat a grill pan over medium-high heat. Cook the patties for about 6-7 minutes on each side until golden brown and fully cooked.
While the burgers cook, toast the burger buns lightly on the pan.
Assemble the burgers by spreading a generous amount of aji amarillo sauce on each bun. Layer with lettuce, a chicken patty, tomato slices, and more sauce if desired. Serve immediately.
