Instructions
In a large mixing bowl, whisk together the flour, milk, eggs, olive oil, and salt until smooth. The batter should be slightly thinner than traditional pancake batter. Set aside.
In a medium-sized skillet over medium heat, melt butter. Add the chopped onion and sauté until translucent, about 2-3 minutes.
Add the minced rabbit and cook, stirring frequently, until lightly browned, around 7 minutes. Then, stir in the cabbage and continue to cook until the cabbage is just tender, about 5 minutes. Season with salt and black pepper. Remove from heat.
In a separate skillet over medium heat, pour a small ladle of the batter and spread into a thin layer. Cook until edges begin to lift and the surface looks set, about 2 minutes. Gently flip and cook the other side for another 2 minutes. Repeat with the remaining batter.
Fill each Palatschinken with a couple of spoonfuls of the rabbit and cabbage mixture. Roll up and serve warm.
