Gozleme is a Turkish flatbread folded around a savory filling and cooked on a griddle until crisp. This version uses spiced lamb mince as the filling, producing a satisfying, protein-rich meal in roughly 30 minutes. The thin dough crisps up quickly, so the whole process is straightforward even on a busy evening.
Prepare the Dough: In a large mixing bowl, combine 2 cups of flour and a teaspoon of salt. Create a well in the center and add 1 tablespoon of olive oil and 3/4 cup of warm water. Mix until a dough forms, then knead for about 5 minutes until smooth and elastic. Cover and let it rest.
Cook the Filling: Heat 1 tablespoon of olive oil in a non-stick frying pan over medium heat. Add chopped onions and sauté until translucent. Add lamb mince and cook, stirring, until brown and cooked through. Mix in the spinach, ground cumin, paprika, black pepper, and salt. Cook for another 2 minutes and remove from heat.
Roll Out the Dough: Divide the dough into 4 equal parts. Roll each piece into a thin, rectangular sheet using a rolling pin.
Assemble the Gozleme: Place a generous portion of filling on one half of the rolled-out dough. Fold over the other half to cover the filling and press the edges to seal.
Cook the Gozleme: Preheat the frying pan once more over medium-high heat. Cook each gozleme for about 3-4 minutes on each side or until golden brown and crispy.
