This burger swaps the standard patty seasoning for the bold, spicy-sweet marinade used in Korean dak galbi — gochujang, soy, sesame, and garlic. The result is a fast weeknight sandwich with noticeably more heat and complexity than a classic burger. Everything is on the table in 30 minutes.
In a mixing bowl, combine the ground chicken, gochujang, minced garlic, soy sauce, and sesame oil. Mix until well blended.
Form the mixture into four equal-sized patties.
Heat a grill pan over medium-high heat (about 200°C/390°F). Cook the patties for about 5 minutes on each side or until they are golden brown and cooked through.
Assemble the burgers by placing a lettuce leaf on the bottom half of each toasted bun, followed by a patty, a slice of cheddar cheese, chopped kimchi, and the top half of the bun.
Notes
For an extra kick, consider drizzling a bit more gochujang sauce on top.
For a milder version, reduce the amount of gochujang or opt for a sweet chili sauce.
