Pork chops are brushed with a smoky BBQ sauce and grilled over high heat until caramelized on the outside and juicy through the middle. A brief marinade or dry rub before cooking adds depth, though even a quick coat of sauce works well on a weeknight. The chops are done in about 20 minutes, grill or grill pan included.

Instructions
Preheat your grill to medium-high heat, approximately 375°F (190°C).
In a mixing bowl, combine olive oil, smoked paprika, garlic powder, salt, and black pepper. Mix thoroughly.
Rub the spice mixture evenly over both sides of the pork chops.
Place the pork chops onto the grill. Cook for 6-7 minutes on each side, or until the internal temperature reaches 145°F (63°C), basting with BBQ sauce in the last couple of minutes.
Remove the pork chops from the grill and let them rest for 3-4 minutes before serving. This helps the juices redistribute for maximum tenderness.
Notes
Lisa’s Tips:
To ensure the pork chops stay juicy, avoid overcooking.
An instant-read thermometer can be very helpful.
For a smoky flavor, consider adding wood chips to your grill.
Alternatively, you can broil the pork chops in an oven for a similar effect if a grill is not available.
