This modern twist on the classic Greek souvlaki combines the succulent flavors of marinated chicken with the casual ease of a burger. Perfect for a quick meal that delights with its aromatic spices and zesty undertones, this dish brings the vibrant essence of Greek street food into your home.
½cupcucumber, grated and drainedremove excess water with a paper towel

For the Burger Assembly:
4piecesburger buns, lightly toasted
1cuplettuce, shredded
1cuptomato, slicedpreferably organic
½cupred onion, thinly sliced

Instructions
In a mixing bowl, combine the olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add the chicken breast, ensuring it's thoroughly coated. Let it marinate while preparing other components, about 5-10 minutes.
For the Tzatziki Sauce, combine Greek yogurt, grated (and drained) cucumber, dill, lemon juice, minced garlic, and salt in another bowl. Mix until smooth and set aside.
Heat a grill pan over medium-high heat. Once hot, grill the chicken breasts for about 6-7 minutes per side, or until cooked through and nicely charred. Feel for firmness or check for a temperature of 165°F (74°C) for doneness.
Assemble the burgers by spreading a generous layer of Tzatziki sauce on the bottom half of each toasted bun. Layer with lettuce, grilled chicken, tomato slices, red onion, and feta cheese, if using. Top with the other half of the bun.
