Classic French crêpes come together in about 30 minutes using basic pantry ingredients — flour, eggs, milk, and butter — whisked into a thin batter and cooked quickly in a hot pan. No special equipment is needed, and the recipe yields roughly 8 to 10 crêpes that work just as well with sweet toppings as with savory fillings like ham and cheese.

Instructions
Preheat and Set Up (2 minutes): If you’d like to keep crêpes warm, set the oven to 200°F (95°C) and place a wire rack over a sheet pan inside. Heat a 10-inch nonstick skillet over medium heat—aim for a surface temperature near 350°F (175°C) if using an infrared thermometer.
Make the Batter (5–7 minutes): In a mixing bowl, whisk 2 large eggs until homogenous. Whisk in 1 cup milk and 1/2 cup water until smooth. Add 1 Tbsp sugar and 1/4 tsp fine sea salt. Sift or sprinkle in 1 cup all-purpose flour gradually, whisking constantly to avoid lumps. Whisk just until silky and lump-free (30–45 seconds after flour is added). Whisk in 2 Tbsp melted butter and 1 tsp vanilla (if using). The batter should be the consistency of heavy cream—thin enough to coat the pan in a quick swirl. If too thick, whisk in 1–2 Tbsp milk. Alternative: Blend all batter ingredients for 15–20 seconds until smooth; rest 5 minutes to settle bubbles.
Optional Brief Rest (5 minutes): Let the batter stand while the pan heats. This relaxes gluten and pops tiny bubbles for delicate crêpes. If you’re short on time, you can skip—texture will still be excellent.
Cook the First Crêpe (2 minutes): Lightly butter the hot pan—dip a folded paper towel in melted butter and wipe the surface to leave a thin sheen. Ladle in about 1/4 cup batter, then immediately lift and swirl the pan so the batter forms an even, thin circle (8–9 inches). Cook until edges look dry and lift easily, and the underside has golden freckles, 45–60 seconds. Flip with a thin spatula or your fingertips (carefully) and cook the second side 20–30 seconds until just set. Slide onto the warm rack.
Continue Cooking (10–12 minutes): Stir the batter occasionally so flour doesn’t settle. Butter the pan sparingly between crêpes only if needed to prevent sticking (too much butter causes uneven browning). Adjust heat to maintain gentle, even golden color. Stack finished crêpes slightly offset so steam can escape and edges stay lacy.
Fill and Serve (2–4 minutes):For sweet: dust with powdered sugar and a squeeze of lemon, or spread with chocolate-hazelnut spread and top with bananas or berries. For savory: after flipping, add ham and Gruyère, fold in quarters, and cover the pan for 30–45 seconds to melt the cheese. Garnish savory with chives. Serve warm from the rack or the low oven.

Lump-Free Batter: Add flour gradually and whisk from the center outward. A brief 5-minute rest relaxes gluten for extra tenderness.
