Make the Quick Buttermilk Marinade: In a large bowl, whisk the buttermilk, egg, hot sauce, and 1 teaspoon kosher salt until smooth. Add chicken and massage to coat. Let sit 10 minutes at room temperature while the oil heats. The chicken should look evenly coated and slightly thickened.
Mix the Spiced Dredge: In a medium bowl, combine flour, cornstarch, baking powder, kosher salt, white pepper, paprika, garlic powder, onion powder, celery salt, thyme, oregano, mustard powder, ginger, and black pepper. Rub the dried herbs between your fingers to wake up their aroma—your mix should smell savory and peppery.
Dredge for a Craggy Crust: Lift each piece from the marinade, letting excess drip off. Press firmly into the dredge, turning to coat; squeeze the flour onto the chicken to form rough, craggy bits—these become extra crispy. Set coated pieces on the rack for 2 minutes so the flour hydrates and adheres. Optional double-dip: dunk quickly back in marinade and re-dredge for a thicker crust.
Fry the First Batch: When the oil is at 350°F (175°C), carefully lower half the chicken into the oil. Fry 5–6 minutes total, turning once, until deep golden brown. Keep the oil between 325–350°F (165–175°C). Internal temp should reach 165°F (74°C). Transfer to the rack; sprinkle with a pinch of flaky salt.
Fry the Second Batch: Return oil to 350°F (175°C) and repeat with remaining chicken, 5–6 minutes. Avoid crowding—space ensures a crisp crust and even browning.
Rest and Serve: Let the chicken rest on the rack for 3 minutes so the crust sets. Serve hot while the exterior is audibly crisp and the aroma is warm and peppery.

Jen’s Tips:
White Pepper is Key: It gives that familiar KFC-inspired warmth. If unavailable, combine 1 1/2 tsp black pepper with 1/2 tsp ground ginger to approximate the profile.
Extra Craggy Crust: After dredging, mist lightly with buttermilk using your fingers, then re-dredge in a few spots.
Cornstarch for Crunch: The flour–cornstarch blend keeps the crust light and crisp.
Oil Management: If temperature dips below 325°F (165°C), fry in smaller batches and nudge the heat up to recover quickly.
Dietary Tweaks: For dairy-free, use unsweetened oat milk plus 1 teaspoon lemon juice in place of buttermilk; for gluten-free, use a cup-for-cup GF flour blend and add 1 tablespoon rice flour for extra snap.
Alternate Cooking: Air fryer at 400°F (205°C): Lightly oil the coated chicken and air-fry 10–12 minutes, flipping at 7 minutes, to at least 165°F (74°C). Texture is lighter than deep-fried but still crisp.
