Aim to stay under about 230°F (110°C); gentle simmer is okay, vigorous boiling is not. Overheating makes hard bars.
Peanut Butter and Vanilla: Remove the pan from heat. Immediately stir in 1 cup creamy peanut butter and 1 teaspoon vanilla until the mixture is smooth, glossy, and aromatic (10 to 20 seconds). You should smell toasty peanut notes.
Coat the Cereal: Pour the warm peanut-syrup over the cereal. Working quickly with a heatproof spatula, fold and turn until every grain is evenly coated and no dry pockets remain—about 45 to 60 seconds. The mixture should look shiny and cohesive.
Press into the Pan: Scrape the mixture into the prepared pan. Use a sheet of lightly greased parchment or a silicone spatula to press it evenly into corners. Press firmly enough to level, but gently enough to avoid compacting (over-packing makes dense bars). Surface should look level and slightly bumpy.
Melt the Topping: In a microwave-safe bowl, combine 1 cup semi-sweet chocolate chips and 1 cup butterscotch chips. Microwave at 50% power in 30-second bursts, stirring between each, until about 75% melted (1 1/2 to 2 minutes total). Stir to finish melting using residual heat; target a silky pool at roughly 95°F (35°C). Alternatively, use a double boiler: set a heatproof bowl over barely simmering water (about 180°F/82°C), ensuring the bowl doesn’t touch the water, and stir until smooth. Stir in 1 teaspoon neutral oil if you prefer extra gloss and softer bite.
Spread and Set: Pour the melted topping over the base. Use an offset spatula to spread edge-to-edge, then tap the pan gently on the counter to level. Let stand at cool room temperature until the top is set to the touch, about 10 to 15 minutes, or refrigerate for 10 to 15 minutes for a quicker set. Sprinkle a pinch of flaky sea salt, if using.
Slice and Serve: Lift the slab from the pan using parchment. For clean cuts, warm a chef’s knife under hot water, wipe dry, and slice into 24 bars. The topping should cut with a gentle snap, and the base should feel chewy, not hard.
