Instructions
Begin by roasting the jalapeño pepper over medium heat in a dry skillet for about 5 minutes, turning occasionally, until blistered and slightly charred. Let it cool, then finely chop.
In a large mixing bowl, combine the flesh of the avocados. Mash them using a fork or potato masher until mostly smooth but still slightly chunky for texture.
Stir in the finely chopped jalapeño, red onion, cherry tomatoes, cilantro, lime juice, and kosher salt. Mix gently but thoroughly.
Add in the ground cumin and smoked paprika. Stir again and taste for seasoning. Adjust lime juice or salt as needed.
Transfer to a serving bowl. Optionally top with extra cilantro leaves or a pinch of smoked paprika as garnish.
Notes
For extra creaminess, add a tablespoon of sour cream or Greek yogurt.
For spicier guac, leave the seeds in the jalapeño or add a pinch of cayenne.
To prevent browning, press plastic wrap directly on the surface of the guacamole before storing.
