Citrus-Tarragon Crab Salad with Crispy Capers and Buttered Brioche

This crab salad recipe is my coastal bistro nod to French summer lunches—silky lump crab folded with lemon, Dijon, and tarragon, brightened by shaved fennel and cucumber for crisp contrast. Instructions
Preheat and Organize: Set your oven to 400°F (205°C). Line a baking sheet. Place a small skillet on the stove for the capers. Gather all measured ingredients so assembly is swift.
Prep the Aromatics and Veg (5–7 min): Zest and juice the lemon. Shave the fennel on a mandoline or slice thinly with a knife until you have 1 cup—look for translucent, delicate slices. Dice the cucumber and finely chop the celery hearts. Mince chives and chop tarragon.
Crisp the Capers (2–3 min): Heat 3 tablespoons olive oil in the skillet over medium-high until it shimmers—about 350°F (175°C) if using a thermometer. Add the well-dried capers; they should sizzle immediately. Fry 2–3 minutes until they bloom (petals open) and turn deeply crisp. Transfer to paper towels. Reserve 1 teaspoon of the caper oil for the dressing if you like.
Toast the Brioche (5–6 min): Lightly butter both sides of the bread slices. Arrange on the baking sheet and toast at 400°F (205°C) for 5–6 minutes, flipping once, until the edges are golden and the centers are still tender. You should smell warm butter and a hint of sweetness.
Whisk the Dressing (1–2 min): In a large bowl, whisk mayonnaise, Dijon, lemon zest, lemon juice, 1 tablespoon extra-virgin olive oil, and the reserved 1 teaspoon caper oil (optional). Season with kosher salt, black pepper, and Aleppo pepper. The dressing should look glossy and lightly pourable.
Fold in the Salad (2–3 min): Add shaved fennel, cucumber, celery, half the chives, and half the tarragon to the bowl. Gently fold to coat. Add the crab last, folding with a broad spatula so the lumps stay intact. Taste and adjust salt, lemon, or pepper.
Plate Beautifully (1–2 min): Spoon generous mounds of crab salad into chilled bowls or onto small plates. Scatter crispy capers over the top. Finish with remaining chives and tarragon, a pinch of flaky sea salt, and fennel fronds. Serve with warm buttered brioche and lemon wedges. Perfectly made salad looks glossy, dotted with emerald herbs and olive-toned capers, and smells of citrus and anise.
Alternative Methods:No oven? Toast bread in a dry skillet over medium heat 2–3 minutes per side. No mandoline? Slice fennel as thinly as possible with a sharp knife. If you lack a thermometer, watch for oil to shimmer and a wisp of smoke before frying capers.

Choose Great Crab: Fresh picked lump or pasteurized premium lump (refrigerated) gives large, sweet flakes. Avoid overly briny varieties.
Keep it Cold: Chill the crab and bowl; cold ingredients keep the dressing light and the crab perky.
Season Gently: Salt blooms over time—aim just shy of perfect in the bowl and finish with flaky sea salt at the end.
Substitutions: Greek yogurt (full-fat) can replace half the mayo; swap tarragon for dill or chervil; use sourdough or crackers instead of brioche.
Dietary Swaps: Gluten-free: serve with GF toast or butter lettuce cups. Dairy-free: skip butter and toast bread dry or brush with olive oil.
Extra Brightness: Add 1 teaspoon of finely grated lemon zest to the capers right after frying for a fragrant pop.

Plate on chilled white plates or shallow bowls for contrast; crown with capers and fennel fronds for height.
