Gozleme are Turkish flatbreads filled, folded, and cooked until crispy on a griddle. This version uses seasoned chicken, earthy mushrooms, and fresh herbs for a savory, satisfying result. The whole thing comes together in about 30 minutes, making it a fast weeknight option with real depth of flavor.
In a mixing bowl, combine 2 cups of flour, 1 cup of plain yogurt, 0.5 teaspoon of salt, and 0.5 teaspoon of baking powder. Mix until the dough is smooth and elastic. Cover with a damp cloth and let it rest while you prepare the filling.
Heat 1 tablespoon of olive oil in a frying pan over medium heat. Add diced chicken breast and sauté for 5 minutes until cooked through. The chicken should be golden brown on the outside and tender inside.
Add sliced mushrooms, 1 teaspoon of ground cumin, and 0.5 teaspoon of paprika to the pan. Sauté for another 3-4 minutes until the mushrooms are soft and aromatic.
Stir in 2 tablespoons of fresh chopped parsley. Stir and set the mixture aside to cool slightly.
Divide the dough into 4 parts. On a floured surface, roll each piece into a thin round, about 10 inches in diameter.
Spread the chicken and mushroom mixture evenly on one half of each dough round. Add crumbled feta and season with black pepper.
Fold the dough over the filling to create a half-moon shape. Press the edges firmly to seal.
Heat a dry frying pan over medium heat and cook each gozleme for about 3-4 minutes on each side, until golden and crispy.
