Make the quick chili crunch (3 minutes): In a small skillet, warm 2 tbsp olive oil over medium heat until shimmering (about 325°F / 165°C; a sesame seed should sizzle on contact). Add sliced garlic and cook 30–45 seconds until pale gold and fragrant—do not brown. Turn off heat, stir in red pepper flakes and sesame seeds, then transfer to a heatproof bowl to stop cooking.
