Curry-spiced ground beef and wilted spinach are baked inside a flaky pastry shell in this filling dinner pie. Using store-bought pastry keeps the prep time short while still delivering a proper, golden crust. Warm spices like cumin and coriander run through the beef filling, giving the pie a depth of flavor that goes well beyond basic comfort food.
Prepare the Filling: Preheat your oven to 400°F (200°C). In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until the onion is translucent. Add the ground beef and brown it, breaking up any lumps with a wooden spoon.
Add Spices and Spinach: Stir in the curry powder, ground cumin, ground coriander, and cayenne pepper. Cook for 1-2 minutes until the spices are fragrant. Add the chopped spinach and cook until wilted, about 2 more minutes.
Simmer and Prepare the Pastry: Add the coconut milk, tomato paste, salt, and pepper. Stir until well combined and simmer for 5 minutes. Meanwhile, roll out the puff pastry and fit it into a pie dish, trimming excess pastry.
Assemble and Bake: Fill the pastry with the beef mince mixture. Cover with another layer of puff pastry, sealing the edges. Brush with the beaten egg for a golden crust. Bake for 20 minutes or until the pastry is golden brown and crispy.

Jen’s Tips
For an extra flavor boost, add a teaspoon of garam masala at the end of cooking the filling.
If you prefer a milder pie, reduce the cayenne pepper.
Substitute ground turkey for a leaner option. For a gluten-free pie, use gluten-free pastry dough.
