Bring to a Boil, then Simmer (7 minutes): Increase heat to medium-high to bring the pot to a boil (about 212°F / 100°C). Immediately reduce to maintain a gentle simmer with small, steady bubbles (around 185–205°F / 85–96°C). Simmer 7 minutes to marry flavors.
Add Chicken and Corn (4 minutes): Stir in shredded chicken and corn. Simmer 4 minutes, just until the chicken is hot and the corn is tender-crisp. The broth should look slightly creamy from the mashed beans.
Finish Off Heat (1 minute): Remove the pot from heat. Stir in sour cream, half the cilantro, lime zest, and lime juice. Taste and season with 1/2 tsp kosher salt and 1/4 tsp black pepper, or to preference. If too thick, loosen with a splash of broth; if too thin, return to a low simmer for 2–3 minutes or mash in a few additional beans.
Serve: Ladle into warm bowls. Garnish with shredded Jack cheese, crushed tortilla chips, avocado and radish slices, and the remaining cilantro. Offer lime wedges at the table.
