30-Minute Skillet Lemon-Herb Chicken with Burst Tomatoes

Bone-in or boneless chicken thighs are seared in a hot skillet until golden, then finished in a pan sauce of butter, lemon, fresh thyme, and cherry tomatoes that soften and release their juices as they cook. Build Aromatics (1 1/2 minutes): Lower heat to medium. Add remaining 1 tbsp butter. Stir in shallot; cook 1 minute until translucent and sweet. Add garlic and red pepper flakes; cook 30 seconds until fragrant—avoid browning for a gentler flavor.
Deglaze and Reduce (2 minutes): Pour in the white wine (or use broth). Scrape up the browned bits (fond) with a wooden spoon—this is pure flavor. Simmer briskly until reduced by roughly half; the pan should smell bright and the liquid should look slightly syrupy.
Build the Pan Sauce (5 minutes): Add chicken broth, Dijon, honey, and lemon zest. Stir to combine, then add cherry tomatoes and capers. Simmer 4–5 minutes until tomatoes begin to blister and the sauce lightly thickens, glossy and spoon-coating.
Return Chicken and Finish (3 minutes): Nestle chicken (and any juices) into the sauce. Simmer 2–3 minutes, spooning sauce over, until the chicken reaches 165°F (74°C) internal temperature and a tomato or two has burst. Off heat, stir in lemon juice, thyme, and half the parsley. Taste and adjust salt, pepper, or honey as needed.
Rest and Emulsify (30–60 seconds): Let the skillet stand off heat for about a minute, swirling to emulsify. The sauce should look glossy with bright aromas of lemon and herbs.
