Instructions
Boil the Pasta Water: Fill a 5–6 quart pot with 4 quarts water and bring to a rolling boil over high heat (about 5–7 minutes). Keep a lid on to speed things up. Once boiling, add 1 tablespoon kosher salt to season the water generously.
Season the Chicken: Pat chicken breasts very dry. Season both sides with 1 teaspoon kosher salt and 3/4 teaspoon black pepper. Dry surfaces brown better, giving you deeper flavor.
Sear the Chicken (6–8 minutes): Heat a 12-inch skillet over medium-high until the oil shimmers. Add 1 tablespoon olive oil and 2 tablespoons butter, then the chicken. Sear 3–4 minutes per side until golden brown and just cooked through (internal temp 165°F / 74°C). Transfer to a plate to rest; tent loosely with foil.
Cook the Pasta (9–10 minutes): Add 12 ounces fettuccine to the boiling water. Stir to prevent sticking and cook until al dente per package timing (aim for slight bite). Reserve at least 1 cup of pasta water before draining; you’ll start with 1/2 cup for the sauce.
Start the Sauce Base (1 minute): Return the skillet to medium heat and add the remaining 1 tablespoon butter. When foaming, add minced garlic and cook 30–45 seconds until fragrant (not browned). If garlic edges begin to color, lower heat—browned garlic can taste bitter.
Build the Cream Sauce (3–4 minutes): Pour in 1 1/4 cups heavy cream and bring to a gentle simmer over medium heat—look for small, lazy bubbles, not a rapid boil. Simmer 2 minutes to slightly thicken, then whisk in 1 cup finely grated Parmigiano-Reggiano, nutmeg, and lemon zest. Sauce should become glossy and coat the back of a spoon.
Slice the Chicken: While the sauce simmers, slice the rested chicken across the grain into 1/2-inch strips. Juices should run clear; the center will be opaque and tender.
Marry Pasta and Sauce (1–2 minutes): Add drained fettuccine to the skillet with 1/2 cup reserved pasta water. Toss vigorously over medium heat until the sauce emulsifies and clings to the noodles. Adjust with more pasta water in small splashes if needed. Taste and season with a pinch more salt and pepper to balance richness.
Finish and Serve: Fold in half the sliced chicken and some parsley, then plate twirled nests of pasta. Top with remaining chicken, a shower of parsley, and extra Parmesan. Serve immediately while steamy and glossy.

Emulsify Like a Pro: Pasta water’s starch helps the cream, butter, and cheese cling. Add in small splashes while tossing until the sauce is glossy and silky.
Don’t Over-Reduce: Keep the cream at a gentle simmer. Boiling can cause separation. If it thickens too much, loosen with warm pasta water.
